Course contents

The new Two-Year Graduate Degree in Sustainable Food Innovation & Management is designed to train analysts, managers, consultants and experts, specialised in management and sustainable innovation in the food sector. The course provides a strong knowledge of food systems and economic, social and cultural processes linked to food and its sustainability, according to the three dimensions set in the United Nations 2030 Agenda: environmental sustainability (Planet), social sustainability (People), economic sustainability (Prosperity).

In this program, Food & Beverage is considered a part of a more complex system that sees the interaction of businesses, consumers, and national and international institutions in diverse cultural, economical and social contexts.

Graduates of this program are thus trained to analyze this system in all its complexities, interacting and interfacing with all of the involved parties, understanding its terminology, values, and trends.

The University of Gastronomic Sciences guarantees the possibility of being recognized as “part-time” students to those who are enrolled in undergraduate and graduate programmes and who are unable to systematically attend academic activities.

The switching from full-time enrollment to part-time enrollment (and vice versa) is allowed only once during the university career. The academic workload required from the student who chooses the part-time enrollment is equal to 45 credits (except for duly justified exceptions) and the normal duration of part-time enrollment will be 4 years for the undergraduate degree program and 3 years for the graduate degree program.

Il Corso di Laurea Magistrale in Sustainable Food Innovation & Management si propone come un corso di studi multidisciplinare, focalizzato sulle tematiche delle scienze gastronomiche declinate in ottica di gestione dell'innovazione sostenibile.
Il Corso di Laurea Magistrale è istituito con un accesso programmato, definito annualmente. I candidati all'ammissione alla Laurea Magistrale verranno vagliati tramite l'esame del curriculum e dei titoli, un test analitico e un colloquio individuale.
Il corso di studi è stato progettato per tenere conto delle conoscenze effettivamente in possesso di studenti provenienti da diversi Corsi di Laurea, interessati allo sviluppo di un percorso formativo orientato ai temi delle scienze gastronomiche.
Sono ammessi al Corso di Laurea Magistrale:

- laureati in possesso di un titolo di laurea triennale conseguito nell'ambito delle seguenti classi di laurea:

1. L-5 - Filosofia
2. L-10 - Lettere
3. L-12 - Mediazione linguistica
4. L-14 - Scienze dei servizi giuridici
5. L-15 - Scienze del turismo
6. L-16 - Scienze dell'amministrazione e dell'organizzazione

- laureati in possesso di un titolo di laurea magistrale a ciclo unico conseguito nell'ambito della classe di laurea LMG/01 - Classe delle lauree magistrali in giurisprudenza.

Possono altresì accedere al corso i laureati, provenienti da Classi di laurea triennale o specialistica, in classi diverse da quelle sopra specificate, previa delibera del Consiglio di Facoltà, che abbiano acquisito almeno 40 crediti, anche erogati in Master di Primo Livello, di cui:

- almeno 15 crediti nei settori scientifico-disciplinari indicati nell'ambito delle Scienze Economiche, Sociali e Politiche:

Le ammissioni sono gestite da una commissione composta da 2 a 4 docenti di ruolo, presieduta dal Coordinatore del Corso di Laurea Magistrale. Ricevute le domande di ammissione dei candidati al Corso, la commissione verifica i requisiti di ammissione del candidato, quindi assegna punteggi specifici ai tre elementi oggetto di valutazione: dossier (costituito dai documenti forniti dal candidato che permettono di ricostruire il suo curriculum), prova scritta analitica e colloquio finale. Lo studente ha facoltà di produrre il dossier in lingua italiana o in inglese, la prova scritta analitica e il colloquio si svolgono in lingua inglese. Per il dossier vengono analizzati i seguenti elementi forniti dal candidato: il curriculum di studi, eventuali esperienze lavorative, il possesso di eventuali ulteriori titoli/certificazioni di attività extra-accademiche, lettera motivazionale. La prova scritta analitica si avvale di un sistema informatizzato attraverso il quale viene somministrato al candidato un test a risposte aperte, con tempi e spazi di risposta predeterminati. Il colloquio può avvenire sia di persona sia attraverso strumenti di videoconferenza. Il Corso è erogato in lingua inglese, pertanto la conoscenza della lingua inglese viene accertata attraverso l'analisi della prova scritta analitica e tramite il colloquio orale. E' richiesto un livello di conoscenza della lingua inglese pari a B2. Per svolgere questo accertamento, il Coordinatore del Corso di Laurea Magistrale può avvalersi della consulenza di docenti di ruolo o a contratto madrelingua. L'eventuale possesso di certificati e attestati riconosciuti relativi alle conoscenze linguistiche vengono considerati al fine della valutazione delle competenze linguistiche. Sono previste due sessioni di ammissione; la graduatoria finale viene pubblicata dopo la seconda sessione. I candidati italiani non ancora in possesso del titolo di laurea di I livello (laureandi) sono iscritti al Corso di Laurea Magistrale con riserva, che viene sciolta unicamente nel caso in cui il titolo di laurea venga conseguito dallo studente entro la sessione straordinaria di laurea dell'A.A. 2022/2023.

The Two-Year Graduate Degree in Sustainable Food Innovation & Management prepares professionals with a solid analytical training, an applied knowledge of gastronomic sciences, and an excellent command of management tools.
