Course contents

Become a culinary professional who’s able to work in order to implement healthy, sustainable and fair food systems. Develop your own cuisine style by exploring the culinary arts, focusing on their processes and understanding why and how food transformations happen.

Analyze the complex world of gastronomy through the lens of cuisine and gain the necessary skills to:

have a positive impact on food systems improving health and well-being by celebrating and preserving biological and cultural diversity; improving the conditions of production, processing, distribution and consumption of food; implementing environmental and social sustainability and food sovereignty
design your own professional path
be part of a network of professionals that are aware of sustainability
face the modern issues that involve cuisine and food transformations
Graduates from this course leave with profound academic knowledge and technical savoir faire, and are able to perform to the highest standards, with brains as sharp as their knives. They are trained to be the next generation of professionals, who are armed with state of the art knowledge and skills as they become ready to cook in the future.

Abroad: The following study trips are included in the program:

1 study trip in EU 1 week
1 study trip extra EU 1 week
Particular attention will be paid to concepts of terroir, food ecologies, and differences between industrial and more traditional settings, as well as first-hand experience along the entire food chain, including distribution and communications. Academic and logistical planning will be managed by university tutors, who also accompany the students during this phase of the program.

Cooking demonstrations lead by chefs and restaurateurs
Working visits to traditional markets, Slow Food projects (Ark of Taste, Slow Food Presidia, Food Community, etc), local restaurants and Cooks Alliance.

In order to apply to the Master of Applied Gastronomy: Culinary Arts, candidates must: register online; ?obtain a positive evaluation of their Dossier. All the aforementioned application steps are free and non-binding. The University of Gastronomic Sciences does not have an early admissions process. However, in some cases, and for justifiable reasons, it is possible to request an individual pre-evaluation by writing to segreteria@unisg.it Please explain your situation and attach supporting documentation.

UNISG offers 1 total scholarship, including Student Housing and Academic Tables, for citizens from low-income countries or lower-middle-income or upper-middle-income countries.

All UNISG students who have graduated or are graduating, who enroll in one of the Master programs at UNISG, are eligible for a reduction from the university fee applied to the second installment.

Italian students residing in Italy may apply for student loans at UNISG partner banking institutions

Students with United States citizenship are eligible to apply for American financial aid through the William D. Ford Federal Direct Loan Program. Note that for all UNISG programs, loan applications must be initiated by the student and received at UNISG electronically.

Notes
The maximum number of students that may be enrolled is 25. The Board of Directors may decide to
exceed the above-stated limit and enroll more students that meet the selection criteria. The minimum
number of students that may be enrolled is 15. Should this lower limit not be reached, UNISG has the
right to not undertake the Master. Students who enrolled in the Master shall be informed of such a
decision by email or registered mail. Within 7 days of the aforesaid decision UNISG shall refund
enrolled students any fees they have already paid without any surcharge and/or additional expense due
to accrued interests and/or currency appreciation.
The Master is open to all graduated students in possession of an undergraduate, bachelor or other postsecondary degree in any field, comprising a minimum of the equivalent of three years of full-time study,
and worth university credit. Final-year students may start the Master program as auditors if they are still
to obtain their undergraduate degree.
