The Master study programme in "Food Science and Technology" is aimed to students with a Bachelor degree

- interested in deepening the factors and technologies that lead to the production of high quality and safe food products,
- able to respond to the changing consumers' needs,
- open to the innovation needs of modern society with a responsible attention to the food chain sustainability.

The Master degree students will study and widen their knowledge on the various aspects of quality management (sensory, healthy, technology) and security of food production, regulatory, economic and marketing, research, development and innovation food products in an international environment with the tutoring and collaboration of teachers and researchers and the support of experts and professionals. In accordance with international guidelines, this study programme is developing a modern training of graduate students and future professionals in the agri-food sector with the appropriate technical and scientific knowledge and professional and personal skills able to manage and innovate responsibly food production.


Thanks to the interaction constant with the main organizations in the sector at national and international level, the Master in Food Science and Technology today is made of courses taught in English and various complementary educational activities in a dynamic framework, vocational training for those who are interested in increasing the knowledge and develop the appropriate skills to enter the world of food and agricultural products at national and international level. The Faculty of Biosciences and Technology for Food, Agriculture and Environment hold a series of modern laboratories with high-tech equipment for the practice and development of projects within the disciplines of the Master study programme and research activities and experiments carried out within the Master degree thesis project.


Currently the Faculty has active more than 300 agreements with agri-food companies and national and international research centers to carry out internships and apprenticeships that can be supported in part by grants from the Erasmus + program.

Graduates in Food Science and Technology will be able to design and develop, manage, monitor, coordinate process and technologies within the food production at different level, from the raw material and ingredients up to distribution, as well as food service and catering. The achievement and improvement of the quality and safety of traditional and innovative foods are main aims of the skills and professional expertise of the food scientists and technologists that are complemented with those that allow them to apply analytical and instrumental techniques within the Quality Assurance and Control.

Graduates will be able to understand, propose and manage the innovations related to the different professional activities of the sector; agri-food economy, business and entrepreneurial skills could also allow to develop a business oriented mindset and professional perspectives. Main areas of work are companies and industries of the agri-food sector at all levels, large retail companies, public and private institutes and organizations that are carrying out analysis, control, certification and research, training institutions and professional services (consultancy, according to the National Law and the Order of Food Technologists rules).

Possono iscriversi al Corso di laurea magistrale LM70 in Food Science and Technology i laureati triennali in possesso di:
- un titolo di laurea conseguito nella classe delle Lauree Scienze e Tecnologie Alimentari (classe L26 – D.M. 270 o classe 20 ex D.M. 509/99, o equiparate ai sensi del D.M. del 9 luglio 2009) o titolo equipollente conseguito all’estero.
- un titolo di laurea nelle seguenti classi:

DM 509/99: 1 (Biotecnologie), 12 (Scienze Biologiche), 20 (Scienze e tecnologie agrarie, agroalimentari e forestali), 21 (Scienze e Tecnologie Chimiche), 24 (Scienze e Tecnologie Farmaceutiche), 27 (Scienze e tecnologie per l'ambiente e la natura) e 40 (Scienze e Tecnologie Zootecniche e delle Produzioni Animali);
DM 270/04: L-2 (Biotecnologie), L-13 (Scienze Biologiche), L-25 (Scienze e Tecnologie Agrarie e Forestali), L-27 (Scienze e tecnologie chimiche), L-29 (Scienze e Tecnologie Farmaceutiche), L-32 (Scienze e tecnologie per l'ambiente e la natura) e L-38 (Scienze Zootecniche e Tecnologie delle Produzioni Animali).


REQUISITI CURRICULARI
Possono iscriversi coloro che abbiano un numero di crediti formativi universitari (CFU) documentato da certificato di laurea o dagli esami sostenuti come di seguito indicato:
minimo 70 crediti formativi universitari (CFU) acquisiti con esami di corsi nell’ambito dei seguenti settori scientifico disciplinari: MAT/01-09 – FIS/01-08 – BIO/10-11 - CHIM/01 - CHIM/03 – CHIM/06 - AGR/01 – AGR/02 – AGR/15 – AGR/16 - AGR/19 – VET/04 – ING-IND/25 di cui almeno 18 CFU di AGR/15 e AGR/16.

Per gli studenti non di madrelingua inglese, secondo il Common European Framework of Reference for Languages (CEFR) è necessaria la conoscenza della lingua inglese a livello minimo di B2 o equivalenti (ad es. Academic IELTS o TOEFL/iBT).

Eventuali integrazioni curriculari in termini di esami/CFU devono essere acquisite prima della verifica della preparazione individuale (art. 6 comma 1 del D.M. 16/03/2007).

Per i laureati con titolo di studio triennale diverso da L-26 Scienze e Tecnologie Alimentari, è necessario sostenere prima dell’iscrizione il test di valutazione dell’adeguatezza della preparazione personale, il cui superamento è vincolante ai fini dell’iscrizione stessa.

Employment opportunities

The graduate in the International Master degree in Food Science and Technology has a wide range of professional opportunities and could be employed in a number of roles within the food system, including the private food and food-related (e.g. packaging, distribution, logistics) manufacturing sector, public administration and health organizations, research institutions, education and training, as well as consultancy, at national and international level.

With reference to the professional activities classified by ISTAT (Istituto Nazionale di Statistica/Italian institute of Statistics, https://www.istat.it/), the graduates of this Master study program could find employment opportunities as “Food Technologist”, “Food and bio-food technician” and “Food technician (in industry)”, “Industrial quality control technician”, “Food biotechnologist”, “Entrepreneur, manager, manager of small businesses” and, in particular, as “Entrepreneur, manager, responsible of a small manufacturing company” and in these roles they can carry out activities of:

- management of food production, processing, storage, distribution and marketing;
- study, design, and management of the manufacturing process of raw materials and semi-finished food products, including waste management, depuration and recovery of by-products;
- distribution and supplying operations of raw materials, finished products, ingredients, food additives and processing aids;
- analysis of food products, quality and quantity control of raw materials, finished products, additives, processing aids, semi-finished products, packaging and everything else concerning the production and processing of food, definition of standards and specifications for the aforementioned products;
- market investigation and related activities associated with food production;
- research and development of processes and products in the food sector.

Graduates can also carry out:

- teaching activity, subject to qualification, in all schools of scientific matters concerning the food sector and similar topics;
- expert and arbitration functions in relation to the skills listed in the previous points.

The graduates in the Master degree in Food Science and Technology could also carry out professional consultancy and free-lance activities after passing the national exam for the qualification as “Food Technologist” and enrolling at the Order of Food Technologists (Law n.59/94) (www.otaa.it, www.otan.it).
