Course contents

The postgraduate course in "Molecular nutrition: from nutrigenomics to functional nutrition" aims to introduce pharmacists, biologists, nutrition professionals and teachers interested in molecular and functional nutrition. In particular, module 1 will introduce the principles of epidemiology necessary to explain and contextualize the main nutritional and public health issues. The advances in molecular biology, genetics and epigenetics aimed at developing the discipline of personalized nutrition will then be described. Specifically, yes will describe the disciplines of nutrigenomics and nutrigenetics, the role of nutrition in the early stages of life in order to prevent multifactorial and chronic diseases through epigenetics, the relationship between oxidative stress, xenobiotics, nutrients and nutrigenomics, the role of the microbiota in prevention health and interface between nutrients and their biological effects (module 2). Module 3 will be dedicated to the description of the functional properties of foods, starting from the chemistry of the bioactive molecules (both endogenous and exogenous) contained in them up to the illustration of their effects at the molecular level and the consequent impact on health. The nutritional effects of the technological treatments to which the foods are subjected will be described. Production excellences of the Marche region will also be presented, which stand out for the production of foods with high nutritional value and which pay particular interest to the aspects related to the topics covered in the course. Module 4 will instead be dedicated to the chemical, toxicological and biological characteristics of nutraceuticals, prebiotics and probiotics and to the different properties they may have. Advanced analyzes in the field of molecular nutrition (such as lipidomics and microbiota sequencing) will be introduced and illustrate the possible applications. Module 5 will conclude the course by providing participants with information on how to communicate this knowledge to the population and introducing them to functional medicine, focusing on the importance that nutrition has, for all the roles it exercises at the molecular level previously described, in the prevention and protection of health state.
